Southwest quinoa salad
Ricetta di1.5 cups quinoa
3 cups water
1.5 tsp cumin
1.5 cups black beans
1.5 cups corn
½ large onion
1 bell pepper, chopped
2.5 tbsp cilantro
2 cloves garlic, diced
1 cup cauliflower pieces
3 tbsp olive oil
Salt and pepper to taste
Preparazione → 25 min
Cottura → 25 min
1. Place water, quinoa and cumin in a medium pot and cook according to quinoa package directions.
2. While the quinoa is cooking, heat a pan or skillet over medium heat.
3. Add the olive oil, onion, garlic, bell pepper, cauliflower and some salt (and pepper if desired).
4. Cook, occasionally stirring, for 5-7 minutes.
5. Add the corn and black beans and heat through (2-5 minutes).
6. Combine the quinoa, cilantro and veggie-bean mixture in a large mixing bowl (or in the pan if you desire a hot salad).
