Aachari aloo (pickled potatoes)

Potatoes: 3 (idaho / general purpose)
Onion: One large
Oil: 3 tbsp
Hing: pinch
Salt: 1/2 tsp
Turmeric: 1/8 tsp
Pacharanga aachar: 3 tbsp (purchase at south asian market)

--- Optional
Cilantro: chopped

Prep. Time → 20 min

Cook Time → 10 min

1. ---Pre-prep
--Potatoes:
(1) steam and boil
(2) peel and cube
--Onions: Cut lengthwise and then slice
--Chilies: Cut them in half

2. ---Cooking time
Heat oil in big pot.
When hot, add green chilies and hing.
Stir 30 seconds.

3. Add sliced onions.
Stir and cook 3-4 minutes (until onions wilt)

4. Add salt and turmeric and aachar.
Mix well.

5. Add steamed potato cubes.
Turn heat down.
Mix well without mashing the potatoes.
Cook 3-5 minutes (stir frequently).

6. Serve hot
