Almond flour flatbread with olive oil and sea salt

1 cup blanched almond flour
1/8 cup flax seed meal
1/8 cup boiling water
1/2 tsp sea salt, plus more for sprinkling
1 tbsp extra virgin olive oil for drizzling

1. Preheat oven to 350 degrees F. Heat a large, dry nonstick skillet over medium-high heat.

2. In a small bowl, combine almond flour, flax seed meal, boiling water and salt. Stir well to form a soft dough.

3. Divide dough into 4 equal-sized balls.

4. Place each ball between 2 sheets of plastic wrap or parchment paper. Use a rolling pin or tortilla press to roll dough ball into a 6" tortilla. Carefully transfer to the heated skillet and cook for 2-3 minutes on each side, until golden-brown and firm. Repeat with remaining dough balls until you have 4 tortillas. Let tortillas rest until cool enough to handle.

5. Place the 4 tortillas in a stack and use a sharp knife to cut them into 6ths (in even triangles).

6. Spread tortillas on an ungreased baking sheet and drizzle with olive oil. Bake for 5-6 minutes until crisp on one side, then flip and cook for 3-4 minutes on the other side.

7. Remove from oven, let cool slightly, then salt.
