Aloo paratha/ potato stuffed paratha

For dough
Wheat flour-2 cups
Oil-1 tspn
Salt
Warm water
For filling
Potatoes-2 medium( boiled and peeled )
Red chilli powder-1/2 tspn
Cumin powder-1/4 tspn
Garam masala powder-1/2 tspn
Coriander leaves-5 tblspn chopped finely

1. In a deep mix together wheat flour and enough salt.Make a smooth dough by adding warm water little by little.The dough shouldn't be too soft or too thick.Drizzle 1 tspn oil and spread all over the surface of the dough.Keep for 15 mints.
2. Mash the potatoes without lumps.Then mix together all the other ingredients together with the potatoes amd make the filling.
3. Divide the dough and the filling into 8 equal,lemon sized balls.
Take 1 dough ball and roll into a thick circle.Place one filling ball in the centre.Take the edges of the circle and cover the stuffing.While covering ,pinch off the excess dough on the top of the filling .Let it rest for 2-3 mints.Roll out into medium thick paratha. Repeat the same with rest of the dough.
4. Heat a flat tawa.Drizzle some oil and place one paratha in it.Cook till small bubbles starts to appear.Now drizzle some oil on the top of the paratha and flip over.Cook till brown spots appear on both sides.Cook all the parathas like this.
Serve with raita, yogurt ,some pickle or any curry of your choice.
5. Tips:The key to perfect aloo paratha is the consistency of wheat dough and potato stuffing should be the same.Also both the dough and the filling should be of room temp.So peel and mash the potatoes only after they cool down to room temp.
6. Also try to avoid adding chopped veggies (including green chillies and onions ) in the filling.You won't be able to roll out smooth parathas then.If you want to add them grate them or make a paste and then add.
