Apple and almond cake

For the cake
175g butter
175g caster sugar
3 eggs
225g self-raising flour+ 1 flat tsp baking powder
A few drops of vanilla essence
A good half jar of Bramley apple sauce
For the icing:
Icing sugar
Water
A few drops of almond essence

Cook Time → 45 min

1. Grease and line a 19-20 cm cake tin with greaseproof paper.

2. Preheat the oven to 190C.

3. Cream the caster sugar and the butter in a bowl with a handheld electric whisk until light and fluffy.

4. Add one egg, and a tablespoon of the flour mixture to the bowl to prevent curdling.

5. Mix until well incorporated and repeat for the other two eggs.

6. Add the flour and baking powder mixture and fold into the cake batter.

7. Add the apple sauce and almond essence into the cake batter as well.

8. Bake for 45 minutes in the preheated oven.

9. Slightly cool in the tin for a few minutes and then turn out onto a wire cooling rack to cool completely.

10. When the cake is cool mix some icing sugar with water and a few drops of almond essence to quite a thick consistency and spread ocer the top of the cake.
