Beef & barley stew

1 1/2 lb stew meat
3 tbsp flour

1 cup carrots, chopped
2 garlic cloves, chopped
1 onion, chopped
1 cup peas, frozen
4 cups potatoes, chopped
1/2 tsp thyme
5 cups chicken broth + 1 cup water

1/2 cup barley

Prep. Time → 30 min

Cook Time → 45 min

1. Warm a soup pot of large Dutch oven over medium heat with oil
Add stew meat and cook
Season with salt and pepper then toss with flour to evenly coat

2. Add onion, carrots, garlic, parsley, thyme, chicken broth, water
Turn up the heat and bring to a boil, stirring well
Cover, turn to medium-low, cook 45 minutes

3. Turn back to high, add potatoes and barley, bring to a boil
Reduce heat to medium-low and cook another 30-45 minutes until potatoes are tender and barley is cooked
Add peas

4. Simpler instructions:
Cook meat, add flour
Add everything else
Cook till done
