Bell pepper panini

2 red bell peppers (halved)
2 tsp. olive oil
8 slices sourdough bread
1/2 cup garlic-herb spreadable cheese
4 slices provolone cheese
basil leaves (amount desired; optional)
2 tbsp. olive oil

Prep. Time → 8 min

Cook Time → 10 min

1. Preheat grill to medium heat. Brush outside of pepper havles with 1 teaspoon of olive oil and place them on the grill skin down.

2. Grill covered 8-10 minutes or until skins are charred. Remove from grill and place in large plastic bag. Let stand 5-10 minutes to loosen skin.

3. Spread one side of each bread slice with spreadable cheese.

4. Top four slices with provolone cheese.

5. Remove skins from peppers and discard skin. Slice peppers and arrange on cheese. Top with basil and remaining bread.

6. Brush both sides of sandwiches with 2 tablespoons of olive oil. Place on grill.

7. Grill covered 2-4 minutes per side or until bread is brown and cheese is melted.
