Blue cheese stuffed pork chops with pears

2 bonless pork loin chops trimmed
1 oz blue cheese
1/4 tsp salt, divided
1/4 tsp black pepper, divided
1 1/2 tsp olive oil
1 1/2 tsp butter
1-2 pears cored and cubed

Prep. Time → 10 min

Cook Time → 15 min

1. Cut a horizontal slit through the thickest part of each chop creating a pocket. Fill each pocket evenly with the blue cheese and pinch to close. Season each chop with 1/8 tsp salt and 1/8 tsp pepper.

2. Heat a large skillet over med-high heat. Add olive oil to pan; swirl to coat. Add pork to pan and cook 3 minutes on each side, or to desired degree of doneness. Remove from pan and let stand 5 minutes.

3. Add butter to pan, melt; swirl to coat. Add pears to pan and season with remaining salt and pepper. Saute 4-5 minutes or until lightly browned; stirring occasionally.

4. Serve pears with pork.
