Breakfast from Italy of Amy Jessup - Recipefy

4 Egg whites - or 1/2 cup Egg Beaters-whites
1 tsp Olive oil
Salt and pepper - to taste
1 oz Prosciutto - cut into small pieces
1 tbsp Low-fat feta
1/3 cup Mandarin orange slices
1 Pear

1. Scramble eggs in olive oil with salt and pepper to taste. Add prosciutto and cheese. Have mandarin orange and pear salad on the side.

2. Feel free to sub the prosciutto for ham, cubed or sandwich meat.
