Broccoli Bacon and Parmesan soup of librarychick4405 - Recipefy

500g broccoli (chopped into flowers)
600ml chicken stock
2 medium potatoes (diced)
6 rashers bacon (diced)
20g button or margarine
2 small brown onions
salt & pepper to taste
250g grated parmesan
1/4 teaspoon nutmeg
1/2 clove garlic, crushed

Prep. Time → 10 min

Cook Time → 15 min

1. Cook onion until soft and transparent.

2. Add broccoli, potatoes, nutmeg, garlic and stock.

3. Bring to boil then cook on moderate heat until vegetables are well cooked.

4. Meanwhile cook the bacon in a pan until crispy.

5. When broccoli mixture is cooked and all vegetables are soft, blend until smooth.

6. Add 3/4 of parmesan and crispy bacon and stir through until parmesan is mostly mixed in.

7. Serve into bowls with small clump of parmesan in the middle.

8. Optional: stir in 200-300ml of cream before stirring (makes the colour less green and makes it a bit more appealing to children - although now much less fattening)
