This recipe is from Carolyn May. It is really simple, good and very impressive when serving a meal for guest. 1/2 gallon ice cream – vanilla 1 1/2 c. toasted coconut 1 1/2 c. toasted chopped pecans 1 1/2 c. mini chocolate chips caramel sauce
Directions
1. Shape 2/3 to 3/4 c. softened ice cream into a ball. Freeze until firm. Mix coconut and pecans together. Roll in coconut, pecans and chocolate chips mixture. Refreeze. Just before serving, heat caramel sauce and pour over ice cream.
