Cannellini beans with spinach and spicy prawns of Forbidden - Recipefy

60ml (1/4 cup) olive oil
3 garlic cloves, chopped
5ml dried chilli flakes
2 x 410g tin cannellini beans, rinced and drained
300g spinach, washed and chopped
juice of 1 lemon
salt and freshly ground black pepper, to taste
12 tiger prawns, heads removed and deveined
125ml fresh flat-leaf parsley, chopped

Prep. Time → 15 min

Cook Time → 20 min

1. heat 45ml olive oil in medium saucepan. Add 2 chopped garlic cloves and fry lightly

2. add 2,5ml chilli flakes, beans, spinach and lemon juice. season and cook for 1 min

3. adjust seasoning, adding more lemon juice if desired and remove from heat

4. prawns:
heat remaining olive oil in non-stick frying pan over high heat. add remaining garlic and chilli flakes. season and add squeeze of lemon juice and parsley

5. to serve, spoon spicy beans into serving bowls and top with prawns
