Cappucino cheesecake

1 1/3 c. graham cracker crumbs (I use cinnamon grahams, but chocolate are good too)
1/4 c. sugar
1/3 c. butter melted
Filling: 3 8oz pkg's cream cheese, softened
1/2c. sugar
1/2c. brown sugar
2 tbsp flour
2 tsp vanilla
3 eggs, room temp
1/4c. milk
1 tbsp instant coffe granules
Topping: mix together well
1c. sour cream
2tbsp sugar
2 tsp vanilla
Cook Time → 55-65 min
1. preheat oven to 450
2. combine crust ingredients and press into bottom and half way up sides of springform pan, set aside
3. using electric mixer, beat together: cream cheese, sugars, flour and vanilla until smooth.
4. Add eggs, beating on low speed just until blended.
5. combine milk and instant coffe, stiring until dissolved, stir into cream cheese mixture.
6. pour into prepared crust; bake at 450 for 10 minutes
7. reduce heat to 250 and continue baking for 45-55 minutes.
8. when done remove from oven, run knife around edge to loosen cake and prevent cracking
9. cool at room temp
10. add sour cream topping (covers flaws)
11. I sprinkle lightly with cinnamon sugar
