Carrot almond pancakes

1 C shredded carrots (2-3 carrots)
1/4 C almonds
2 TBS flaxseed meal
2 TBS unsweetened coconut flakes
1/4 C water
1 tsp cinnamon
salt
cooking spray
honey or almond butter

Prep. Time → 10 min

Cook Time → 15 min

1. Grind almonds into a meal in food processor.

2. Mix carrots, almond meal, flax meal, coconut flakes, water, and cinnamon together until well mixed.

3. Cover and put in refrigerator overnight.

4. Divide into 4 portions. Cook in pan with cooking spray 3-4 minutes per side until brown.

5. Heat Almond butter until liquidy. Or use honey. Drizzle over pancakes.
