Ingredients
- 28gm (1 oz) flour, preferably wholemeal (4½ Syns) (or 5 Syns if using plain flour)
- a little extra flour for dusting (1 Syn)
- 100gm (3½ oz) cold cooked mashed potato
- 42gm reduced fat mature Cheddar cheese, grated**
- good pinch of paprika or cayenne pepper (optional)
- pinch salt
- cold water to bind

1. Method
1. Mash the cold potatoes very thoroughly until all lumps are gone, adding a little water if necessary.

2. Stir in the flour, grated cheese & paprika or cayenne (if using) & mix thoroughly.

3. Gradually add cold water to form a firm dough. Wrap in foil or cling film and chill in the fridge for 30 minutes.

4. Roll out thinly (about ¼ cm thick) on a floured board and cut into 10 straws, each around ½ cm wide. Bake in a preheated oven at 200C / 400F / Gas 6 for about 10-15 minutes until golden brown. Best eaten warm or on the day they are baked.

Notes
This mixture can also be used as a pie case for savoury quiches or pies. Bake blind for 10 minutes before adding the filling.
Sweet potato can also be substituted for ordinary potato.
Mixture raw and cooked is a bit more fragile than ordinary pastry.
