Cheesy potato and broccoli soup recipe

1 tsp vegetable oil
1 onion, chopped
2 small gold potatoes
4 cups broccoli florets
5 cups chicken stock
1/4 cup half and half
1 cup shredded cheddar
1 salt and pepper to taste

Prep. Time → 15 min

Cook Time → 35 min

1. 1. In a medium pot, add vegetable oil; Add onion and potatoes; sautee till softens.

2. 2.Add Broccoli and chicken stock to cover; let it come to a boil, turn down to medium, and let simmer till broccoli is nice and tender/ potatoes.

3. 3.Add half&half, pinch of salt and pepper: Add cheddar cheese; stir to melt in.

4. 4.Serve.
