Chicken & chorizo pasta

250g penne pasta,
1 tbs olive oil,
chicken strips,
1 chopped red pepper,
1 fresh chorizo sausage
1/2 jar passata
250ml single cream,
1/2 tsp dried or fresh chillis. (optional)
50g grated cheddar cheese
50g grated mozzarella
25g freshly grated parmesan cheese.

Prep. Time → 30mins min

Cook Time → 40mins min

1. 1, preheat oven to 190 c / gas mark 5.

2. 2, boil a large pot of lightly salted water to the boil, add pasta & cook for 8 to 10 mins, or untill al dente, drain & set aside,

3. 3, in a large pan, heat oil & add chicken, cook untill brown about 5 mins, add the pepper & chorizo & cook for 5 mins, untill the chorizo is hot & the chicken is no longer pink in the centre, remove from the heat.

4. 4, pour the passata, cream & chilli flakes into a smll sauce pan, simmer over a medium- high heat, then reduce to medium-low heat, & simmer for 5 mins, or untill the sauce has thickened,

5. 5, add the drained pasta, & sauce to the frying pan cotaining the chicken, & mix well, pour into an oven proof dish, sprinkle the chedder, mozzarella, & parmesan cheese over the top, bake for 30 mins or untill the cheese is golden & bubbly,
