Chicken puttanesca

Olive oil spray
1 28 oz can diced tomatoes
1 lb boneless skinless chicken (4 pieces)
3 garlic cloves, minced
10 black olives
2 tbsp capers
2 tsp butter or ghee

Prep. Time → 5 min

Cook Time → 20 min

1. Sauté chicken until browned, 3-5 min each side depending on the thickness

2. Remove chicken from pan. Melt butter. Sauté garlic about one minute. Add olives and capers, then tomatoes. Simmer approx 3 minutes. Add chicken and any accumulated juices back to pan.

3. Serve with zucchini noodles.
