Chicken Vindaloo of Kitchen Snippets - Recipefy

Chicken-1/2 kg
Onion-2 sliced
Ginger-garlic paste-1 1/2 tspn
Tomato-1 sliced
Green chilli-1
Curry leaves
Oil
Salt

To grind

Small onion-3 or 4
Kashmiri red chilli powder-2 1/2 tspn
Coriander powder-2 tspn
Turmeric powder-1/4 tspn
Whole garam masala-1 small stick cinnamon,5 cloves,2 cardamom,1/4 tspn whole black pepper,a samll piece of star anise,1/2tspn fennel seeds,1/4 tspn poppy seeds
Vinegar-2 1/2 to 3 tspn

1. Wash the chicken pieces well.

2. Grind together the ingredients listed under "to grind" to a smooth paste.Keep aside.

3. Heat oil in a pan and saute onions till they become light brown.Add ginger garlic paste and green chilli.Saute till the raw smell goes.
Add chopped tomato,saute,cover and cook till they become soft and mushy.Now add the prepared masala paste.Saute well till oil starts to separate.
Now add in the chicken pieces,curry leaves and enough salt.Mix everything well and make sure that the chicken pieces are coated well with the masala.
Cover and cook in low-medium flame.(add 1/2 cup of water if needed; depends on the consistency of the gravy you need ).Cook till the chicken pieces are cooked well.
Remove from fire and serve hot .Goes well with parotta,naan or roti.
