Chilled cucumber soup

Ingredients for 2 large takeout containers full
· 3 large Cucumbers (european) cut into large chunks
· ½ a red onion
· 1 shallot
· 5 cloves garlic
· 1/3 c Dill
· 1/4c Parsley
· ½ c olive oil
· 1/4c lemon juice
· Whole peppercorns
· Salt

Directions
1. · Roughly chop all ingredients, and blend in vitamix until creamy
· Let chill in fridge for 8+ hours (but I sometimes eat a bowl of this fresh out of the blender and it’s still very good!)
