Chilli con carne
Recipe by500g good quality steak mince
Two carrots
2 large onions
Olive oil
Tin chopped tomatoes
Tin red kidney beans
One large red pepper
4 or 5 hot red chillis
Desert spoon plain flour
2 teaspoons cocoa powder
Boiled rice to accompany
1. Brown the mince and chopped onions until dry and almost beginning to burn. Sprinkle the flour and cocoa powder onto the meat and fry for a further minute.
Add the chopped tomatoes, chopped carrots and simmer for about 30 minutes. Stir frequently to prevent sticking and add small quantities of water to prevent drying out.
Roughly chop the red pepper and finely chop the chillis and add to the meat. Add the kidney beans. Cook for a further 30 minutes.
2. We usually serve this with boiled rice and Nan bread
