Chilli con carne.
Recipe by
2 tablespoons of olive oil
2 onions, chopped
2 garlic cloves, crushed
1 large red and 1 large green pepper,
deseeded and chopped
1lb of minced beef
400g tin of peeled plum tomatoes
1 beef stock cube
1-2 teaspoons of chilli powder
1 teaspoon of ground paprika
salt and freshly ground black pepper
400g tin of red kidney beans, drained
Prep. Time → 20 min min
Cook Time → 1&1/4 hrs min
1. Heat the oil in a larg pan.
Add the onions, garlic, peppers and mince.
Cook, stirring for 5 minutes until the mince is browned.
2. Add the tomatoes and thir juce.
Add the stock cube, chilli powder, paprike and 1/4 pint
of water and mix together well.
Season with salt and black pepper.
3. Add the beans to the pan.
Turn the heat down to low,
cover and simmer for 1 hour,
adding a little water if needed.
