1 head romain lettuce, finely chopped
2 medium tomatoes, finely chopped (about 2 cups)
1 green, yellow, or red bell pepper, finely chopped (about 1 cup)
1 cucumber, peeled, seeded, and finely chopped (about 1-1/2 cups)
1/3 cup finely chopped fresh basil leaves
1/2 cup chopped, pitted kalamata olives
2 Tbsp olive oil
2 Tbsp red wine vinegar
Salt and freshly ground black pepper to taste
1. Combine the lettuce, tomatoes, peppers, cucumber, basil, and olives in a large bowl. Drizzle on the olive oil and vinegar and toss. Season with salt and pepper to taste.
