Christmas spiced red cabbage

(serves 8) 1 large red cabbage(finely chopped),
knob butter,
large onion(finely chopped),
zest and juice of an orange ,
cinnamon stock, 150ml port,
150 ml water,
1 tablespoon red wine vinegar.

Prep. Time → 15 min

Cook Time → 60 min

1. Heat butter in large pan, add onion and cook until softened.
Add orange zest and cinnamon stick and cook for further minute
add the cabbage, port, vinegar, orangejiuce and water.
Bring to the boil, reduce to simmer and cook45-60 mins until cabbage softened.

2. can be made ahead and put in fridge( days) ot freezer. Add a little water before heating through in saucepan or microwave.
