Cilantro-Cashew Pesto of Plants on My Plate - Recipefy

2 cups chopped cilantro, not stems
½ cup raw, unsalted cashews (soaked or un-soaked)
2 cloves garlic, minced
2-3 T. pure maple syrup OR 2-3 pitted dates
½ cup olive oil (if oil-free, omit oil and add more cashews and water to desired consistency)
salt and freshly ground black pepper, to taste
½ lime, juiced (or more, to taste)

Prep. Time → 15 min

Cook Time → 0 min

1. Make the pesto:
Combine cilantro, cashews, syrup, and garlic in a food processor. Start processing the mixture, and slowly drizzle in the olive oil. Season with salt, pepper, lime juice and red pepper flakes, all to taste, and blend well.
