Cracked wheat masala upma

Cracked wheat-1 cup
Onion-1 small chopped
Ginger-1tblpsn chopped
Carrot-1 cubed
Potato-1 cubed
Beans-1/4 cup chopped
Sweet corn-1/4 cup
Tomato-1 chopped
Green chillies-1-2 chopped
Curry leaves
Mustard seeds-1/4 cup
Red chilli powder-1/4 tspn
Coriander powder-1/4 tspn
Turmeric powder-a pinch
Fresh coriander leaves
Salt
Oil
Water-1 1/2 cup boiling water
1. Half boil carrots, potatoes ,beans and sweet corn and keep aside.
2. Heat oil in a pan and splutter mustard seeds.Add onion,ginger,green chillies and curry leaves.
Saute till onions turn transparent.Then add half cooked vegetables and mix well.
Add tomatoes and saute well till the tomatoes become mushy.
To this add turmeric powder,red chilli powder and coriander powder.Saute till the raw smell goes.
3. Add cracked wheat to the masala and saute for 1 more mint.Then add 1 2/ cups of boiling water.Sprinkle enough salt and chopped coriander leaves.Mix well,cover and cook in low-medium flame.
4. Cook till all the water dries up and wheat is cooked well.If wheat looks uncooked,sprinkle little more hot water and keep in low flame for little longer.
Once cooked,remove the lid of the pan and keep opened in low flame for 1-2 mints.
5. Remove from fire and enjoy with pickle or sliced bananas.
