Cream filled ginger cookies recipe

1/2 cup shortening
1/4 cup unsalted butter at room temp.
3/4 cup brown sugar
1/4 cup granulated sugar
1/4 cup molasses: *make sure you spray your cup with non stick spray so it comes out easier*
3 tsp ground ginger
2 tsp baking soda
1 egg
1 tsp vanilla extract
2 1/4 cups all-purpose flour
1 tsp cinnamon
1/2 tsp salt
1 granulated sugar, for dipping

(for the filling:)
3 oz cream cheese, softened at room temp
1/4 cup unsalted butter at room temp.
2 cups confectioner sugar
1 tsp vanilla extract
2 tsp lemon zest

Prep. Time → 10 min

Cook Time → 10 min

1. 1. Preheat your oven to 375*. line (2) baking sheets with parchment paper, and set aside.

2. 2. In a standing mixer, add (both) kinds of sugars, along with the shortening & unsalted butter. mix togeher.

3. 3.In the bowl with the flour, add spices, salt, and baking soda. Mix together.

4. 4.When butter and sugar is nice and fully, add mollases, egg, vanilla extract. mix till well combined.

5. 5.Add dry Ingredients to standing mixer. mix to combine.

6. 6. Take off standing mixer, and take Ice cream scooper; take some batter, form into ball, take some sugar and roll it in there, and place on parchment paper. Then take a fork, press down and do a kriss cross pattern.

7. 7.Put in oven 375* for 10 mins, and let cool competly.

9. 8. In a standing mixer, add butter and cream cheese and vanilla extract and lemon zest. Mix till nice and creamy.

10. 9.Add in confectioner sugar. mix to combine.

11. 10.Give it a good mix with spatula.

12. 11.Take a mini spatula, and take some cream and put on cookie, and top with another cookie (sandwhich like^)
