Easy chicken souvlaki sw

- 4 skinless, boneless chicken breasts, about 113gm (4oz) each
- Fry Light
- 1 onion, peeled and sliced
- ½tsp ground cumin
- 4 standard round pitta breads, 60gm each (7½ Syns)
- 12 cherry tomatoes, halved
- 7 stoned black olives, sliced (1 Syn)
- ½ lettuce, rinsed and divided into leaves
For the sauce
- 175ml (6fl oz) very low fat natural yoghurt
- 113gm (4oz) cucumber, peeled and finely diced
- juice of ½ lemon
- 1tbsp chopped fresh mint
- ½tsp paprika
1. Method
1. Cut the chicken into 5cm (2in) pieces. Set aside. For the sauce, mix together the yoghurt, cucumber, lemon juice and mint in a bowl. Sprinkle over the paprika. Cover and chill. Preheat the oven to 140C / 275F / Gas 1.
2. Heat a large frying pan sprayed with Fry Light over a medium heat. Add the onion; fry for five minutes until golden.
3. Add the chicken and cumin. Cook for 5-10 minutes, stirring, until the chicken is no longer pink in the centre. Meanwhile, put the pitta breads in the oven to heat.
4. Add the tomatoes and olives to the pan. Cook for 3-4 minutes, stirring occasionally, until warmed.
5. Place the breads on 4 plates and arrange the lettuce on top. Spoon over the chicken mixture and a little sauce. Fold over the breads and serve with the remaining sauce.
Notes
Fold the breads gently, or the chicken mixture will spill out. If round pitta breads are unavailable, use oval ones: split them open & fill with the lettuce, chicken mixture and sauce.
