Egg and bacon bagel breakfast

1 whole Bagel (plain)
2 Free range eggs
A knob of Butter
50ml Single/double cream
3-4 rashers of Streaky bacon
A pinch of Salt
1 cup of Blueberries
6 Strawberries
1 small pot of Greek style yoghurt

Prep. Time → 5-10 min

Cook Time → 15 min

1. Lightly whisk the eggs, cream and salt together until they are all evenly mixed and it has one consistency. Put to one side

2. Place the bacon under the grill on full heat. Check and turn regularly with the tongs. You want them to be brown but not burnt.

3. Cut the bagel in half and toast it lightly. Do this under the grill or in a toaster. Once it has toasted to your likings, then butter them and keep warm.

4. Warm the frying pan up and melt butter until frothy. Pour the egg mixture into the pan and leave for 10-20secs. Then stir from the outside to the centre until correct texture.

5. Serve up. Put the bottom half of the bagel onto a plate and place the egg on top of it, making sure it stays together. Then droop the bacon over the eggs and place the other half of the bagel on top

6. Gather all the fruit for the smoothie. Blend it all up in a blender and make sure it is completely smooth. Then serve in a cup.

7. Enjoy!
Top tips
• You may want to garnish the main dish with grilled tomatoes or chives
• Instead of garnishing the dish with chives, you could mix chives into the eggs
• At the end you could evenly drizzle a sauce of your choice (BBQ sauce, Ketchup etc.)
