Egg masala
Recipe by
Eggs - 3 ( boil and remove shell carefully )
Oil - 2 tblspn
Mustard seeds - 1/4 tsp
Curry leaves
Onion - 1 medium sized
Ginger garlic paste - 1 tsp
Red Chilli powder - 1/2 tsp ( for marinating eggs)
Garam masala powder - 1/2 tsp(for marinating eggs)
Turmeric power - a pinch(for marinating eggs)
Salt - to taste
To roast and grind
Oil - 1 tsp
Dry Red Chillies - 2 to 3
Small Onion - 10
Coriander seeds - 1 tsp
Cinammon - 1/4 inch piece
Green cardamom - 1/2
Fennel seeds - 1/2 tsp
Poppy seeds - 1/2 tsp( optional )
Black Pepper - 1/2 tsp
Tomato - 1 big
1. Make shallow slits all along the boiled eggs.Marinate with red chilli powder,garam masala powder and turmeric powder.Heat 1 tblspn oil in a pan and shallow fry the marinated eggs for few mints( don't fry for too long )
Keep aside .
2. Heat oil in a pan and add the ingredients under 'to roast & grind' ,saute till onions turn golden brown and tomatoes turn mushy and the raw smell goes.
Grind it to a smooth paste.
3. Heat 1 tblspn oil in another pan and splutter mustard seeds.Add curry leaves and onion.Saute till the onions turn golden brown.To this add the ginger garlic paste and saute till the raw smell goes.Then add the masala paste to this and mix well.
Sprinkle enough salt,add little water and allow it to boil.
4. Once the gravy boils,add the fried eggs to it,add chopped coriander leaves,mix well , cover and cook for 5 more mints in low flame.
5. Serve hot with rice/roti
