Egg muffins of Amy Jessup - Recipefy

12 eggs
1 onion - diced
1 cup mushrooms - chopped
3 cups spinach - chopped
1 tbsp butter
apple or apple sauce

1. Saute the veggies in butter till soft. Take out of the pan and drain the liquid. Add veggies and eggs in a bowl and mix well. Grease the muffin tin and then fill with your egg mixture.

2. Bake at 250 for 20-25 minutes. Check often. I make them a little underdone so I can cook them a little longer in the microwave and they aren't over cooked. But too underdone and the middle is still runny so it makes a mess.

3. These are great grab and go breakfast, but by themselves they are a little short on carbs. If you can, throw some applesauce (or an apple) in your bag as well and you're good to go.

4. Each muffin is 82 calories, 5g fat, 3g carbs, 7g protein. With a quarter cup apple sauce per muffin, you're looking at 117 calories, 5g fat, 11g carbs, 7g protein. An average active female should eat 3 muffins and 3/4 cup apple sauce for breakfast and an average active male should eat 4 muffins and 1 cup apple sauce.
