Eggless caramel cake
Recipe by
Sugar-1/4 cup
Warm water-30 ml
Maida/All purpose flour-1 cup
Butter-50 gms
Condensed milk- 200 gms
Baking powder-1/2 tspn
Baking soda-1/2 tspn
Soda water( club soda)-50 ml
Caramel essence-1 tspn
Salt-a pinch
1. Make caramel syrup
2. Add sugar to a pan.Stir it evenly using a spoon.When the sugar melts and starts to chage colour,immediately simmer the flame to lowest.
Otherwise the sugar will get burned quickly.Then stir till the sugar syrup becomes dark brown in colour.Now remove from fire.
Add 30 ml warm water to it( keep a safe distance away while adding water).Mix well and let the syrup cool down to room temp.
3. Now sift the flour,baking powder.baking soda and salt thrice.Keep aside.
4. Take a baking pan(6" pan) and spread butter in it evenly.Now add some flour to it.Tap and spread the flour all over the pan.Remove
excess flour.The pan is ready.
5. Now add butter to a pan.Whisk it well without lumps.Add condensed milk and caramel syrup to it.Whisk well.Add the sifted flour little by little and
fold in well to a smooth batter.Finally add soda water and caramel syrup.Mix everything well.
6. Pour this batter to the prepared pan.Tap the pan three times to remove air bubbles.
7. Bake in 180 degree preheated oven till a tooth pick inserted comes out clean.Remove from pan .Don't cut the cake when it is too hot.
Cut when it is warm enough and enjoy :)
