Enchilada casserole

1 lb. ground beef, browned
peel, cut and boil two large baking potatoes
1 small can of peas, drained OR peas and carrots
1 can red enchilada sauce
corn tortillas
8-12 oz. cheddar and/or mozzarella cheese
olives and sour cream optional

Prep. Time → 20 min

Cook Time → 30 min

1. spread a tablespoon or two of enchilada sauce in bottom of round casserole dish

2. tear tortillas into bite sized pieces and spread a layer over sauce

3. layer beef, potatoes, peas, sauce and cheese followed by tortillas- ending with sauce and cheese

4. cover with foil, bake at 350 degrees for 30 minutes until hot and bubbly

5. serve with salsa, sour cream, olives, chips and margaritas (for those of age)!
