Enchilada chicken

2 lbs boneless skinless chicken breasts ½ cup yellow onion, green bell pepper ¼ cup cilantro 2 t. oregano leaves 3 T. finely chopped garlic 2 t. salt 2 t. pepper 4 cups water ( 1 quart)

1. Put meat and all ingredients together in a large pot and bring to boil slowly. Reduce heat and simmer for 1 to 1 ½ hours. Chicken is great in soups or any Mexican dishes.
