Falafel pitas

Sauce
1 cup 2% reduced fat Greek yogurt
2/3 cup chopped peeled cucumber
1 teaspoon chopped fresh dill
1 garlic clove, minced

Falafel
1 (15oz) can chickpeas
1/4 cup dry breadcrumbs
1/4 cup finely chopped fresh parsley
3 tablespoons finely chopped red onion
1 teaspoon garlic salt
1 teaspoon ground coriander
1 teaspoon ground cumin
2 tablespoons olive oil

Pitas
Lettuce
1 cup chopped plum tomato
2/3 cup thinly sliced cucumber

1. To prepare sauce, combine the first four ingredients in a small bowl and set aside.

2. For falafel, scoop out 3 tablespoons of the liquid in the chickpea can and place in a food processor. Drain the rest of the chickpeas and add to the food processor along with the breadcrumbs, parsley, red onion, salt, coriander and cumin.

3. Process until minced.

4. Divide into 6-8 half-inch patties.

5. Heat a large skillet over medium high heat. Add oil to the pan, swirling to coat. Add patties to pan and cook for about 3 minutes per side or until golden brown. Remove from pan.

6. Spread sauce into each pita half and fill with lettuce, tomato, cucumber, and falafel.
