Fiesta Chicken of Karyn Johnson - Recipefy

6 chicken breasts
1/3 cup Italian salad dressing
Fresh ground pepper
Salt
16oz package mushrooms, quartered
10oz package grape tomatoes, sliced lengthwise
15oz can black beans, rinsed
15oz can corn, drained
Mozzarella, shredded, as much as you like (2cups)
Pico de Gallo
1 avocado, sliced

1. Trim all fat from breasts, place in zip lock bag with Italian dressing, marinate for a few hours or over night.

2. Grease or spray a glass 9x13 baking dish. Place chicken breasts in, be generous with the fresh ground pepper, and a little salt.

3. Bake in 350° oven for 20-30 minutes, depending on the size of your breasts (lol)

4. Meanwhile, combine corn, black beans, tomatoes and sauteed mushrooms.

5. Remove chicken from oven, and top with some of the vegetable mixture, divide the mozzarella onto the 6 breasts, then the rest of the veggie mixture.

6. Bake for another 15-20 minutes.

7. Serve with lots of pico de Gallo and avocado.

8. (The recipe for my pico de gallo is in Appetizers. If you don't have time to make it, you must add diced onions to the vegetable mixture and top the dish with plenty of chopped cilantro just before serving. Canned tomatoes or Rotel may also be substituted.)
