2 cups of rice shopping list

2 cups of cooked dried black beans. (reserve the cooking water) shopping list

1 small or medium onion finely chopped shopping list

1/2 small red pepper finely chopped shopping list

3/4 cup of fresh chopped cilantro shopping list

2 cloves of garlic, Minced shopping list

Reserved bean cooking water shopping list

4 Tbsp of olive oil (EVOO) shopping list

1. Heat oil in a pot over low heat.

2. Infuse the oil with the whole garlic and half of the onion, red pepper and
cilantro for 2 or 3 minutes.

3. Raise the heat to medium high and saute the rice stiring constantly until light golden colored.

4. Add the Beans.

5. Cover the rice and beans with about 2 1/2 to 3 cups of the reserved bean cooking water.

6. Give it a quick stir, cover, reduce heat to low and cook for 20 minutes or until rice is cooked.

7. Add the other half of the onion, red pepper and cilantro anf fluff the rice gently with a fork.

8. Enjoy

9. P.S. Sorry if i'm a bit vague about the quantities and cooking time. I'm just
really intuitive when i cook rice. Rice is one of those ``It's ready when you know it's ready`` Type of ingredients. It requires practice but when you know how to cook a good rice, it is quite rewarding.
