Gingerbeer cake of Forbidden - Recipefy

260g cake flour
170g castor sugar
7.5ml ground ginger
2.5ml cinnamon
5ml baking powder
170ml ginger beer (In South Africa I use Stoney brand)
80ml oil
260ml golden syrup
3 eggs

ginger icing
100g soft icing sugar
250g icing sugar
25ml gingerbeer

Prep. Time → 20 min

Cook Time → 65 min

1. Preheat oven to 150C. Grease and line 20cm cake tin.

2. in large mixing bowl, combine cake flour, castor sugar, ground ginger, cinnamon and baking powder

3. in medium sized measuring jug, whisk together ginger beer, oil, golden syrup, and eggs

4. gently combine gingerbeer mix into dry ingredients

5. once combined pour mixture into greased cake tin

6. bake 50 - 65min

7. remove cake from oven and allow to cool in cake tin for 10min before turning out

8. icing:
cream butter and icing sugar together, scraping down sides, add gingerbeer as needed to a spreadable consistency

9. once completely cooled, spread icing onto cake
