Grain-free gingersnaps

2 cups almond flour
1 ½ cup almond butter
1 egg
1-3 tbsp freshly grated ginger (more the better in my book)
2-4 tbsp honey (depends on how sweet you want. I only use 2 tbsp but I like my ginger snap to be ‘savory’)
3 tbsp molasses
1 tsp ground ginger
2 tsp cinnamon
1 cup crystallized ginger chopped
½ tsp baking soda
¼ tsp salt

Prep. Time → 10 min

Cook Time → 12 min

1. Preheat 350F. Line 2 cookie sheet pans with parchment paper

2. Throw all ingredients into food processor or mixer. Whirl it all up until it all comes together.

3. Drop tablespoonfuls of dough into cookie sheet, flatten to ½ inch thick. I fit 12 on each pan. The batter will be a bit greasy. Ignore that..

4. Bake 10-12 minutes. Until you can smell the gingery snap fill your kitchen.
