Grape and Raspberry Cake of Forbidden - Recipefy

2 large eggs
half cup sugar
100g butter
quarter cup olive oil
third cup milk
2 tbsp vanilla essence
200g cake flour
1 tsp baking powder
pinch of salt
zest of 1 lemon
250ml seedless red grapes
250ml raspberries
sweetened whipped cream, to serve

Prep. Time → 20 min

Cook Time → 25-30 min

1. Preheat oven to 180C. Grease or line 30x20cm cake tin

2. Whisk eggs and sugar for a few minutes until pale and thick.

3. Whisk in butter, oil, milk, vanilla essence.

4. Stir in the flour, baking powder and salt and mix with a wooden spoon to combine

5. Lightly stir in the zest, grapes and raspberries

6. Pour into tin making sure that the berries are spread across the batter.

7. Bake until golden on top, about 25-30min. Allow to cool

8. Serve at room temperature with whipped cream.
