Great Lunch Time with Cajun Chicken Pasta of Sonoma Farm - Recipefy

Skinless, boneless chicken breasts – 3 (cut into cubes), Fettuccine – 1 pound, Cajun spice mix – 3 teaspoons, Garlic olive oil – 3 tablespoons, Butter – 2 tablespoons, Green bell pepper – 1 (seeded and sliced), Red bell pepper – 1 (seeded and sliced), Red onion – ½ Large (Sliced), Roma tomatoes – 4 (diced), Low sodium chicken broth – 2 cups, White wine – ½ cup, Heavy cream – 1 cup, Cayenne pepper – as per taste, Freshly ground black pepper – as per taste, Salt – to taste and Fresh parsley – to taste (chopped).

Prep. Time → 35 min

Cook Time → 25 min

1. At first cook fettuccine pasta and drain when pasta is still al dente. Don’t overcook the pasta. Take chicken breasts and sprinkle 1 ½ teaspoons Cajun spice mix over it and toss around to coat well. Then heat 1 tablespoon butter and 1 tablespoon garlic olive oil in a skillet over high heat. Add the chicken pieces inside it in a single layer and don’t stair them. Leave them for 1 minute, then flip and cook the other side for another one minute. Remove the pieces and place on a clean plate.

2. After finishing this, add remaining garlic olive oil, butter on that skillet. When heated, add onion and peppers. Sprinkle the remaining Cajun mix over it and add salt as per your taste. Cook for 1 minute over high heat, stir gently and cook the vegetables as dark as possible. Then add tomatoes and cook for additional 30 seconds and remove the vegetables from pan.

3. Once more heat up the pan and pour chicken broth and white wine inside it. Cook for 3-5 minutes on high heat, scrapping the bottom of the pan. Then reduce the heat to medium and pour in the cream. Stir the mix constantly. Cook the sauce for few minutes, until the mixture get thicken. Add freshly ground black pepper, cayenne pepper and salt. Finally add the chicken pieces and vegetables to sauce. Stir well and cook for 1-2 minutes. Then add fettuccine and toss.
