Greek Potatoes & Carrots of Bobby Keillor - Recipefy

1/2 - 1C chicken broth
2 - 3 cloves minced garlic
Juice of 3 lemons
Olive Oil
Greek Seasoning
4 large russet potatoes peeled & quartered
3 -4 Carrots peeled and cut in large diagonal pieces
Salt & Pepper to taste
1/4 C butter

Prep. Time → 15 min

Cook Time → 60 min

1. Wash & peel the potatoes and carrots. Cut potatoes into quarters lengthwise, cut carrots into large diagonal pieces.
Place in a large, deep baking/roasting pan.
Sprinkle with olive oil
Add enough chicken broth to the pan to have the veggies covered approx. 2/3.
Add lemon juice.
Season the veggies with the Greek seasoning
Add minced garlic
Stir together to ensure garlic & seasoning has combined
Sprinkler veggies with more of the Greek seasoning
Cut the butter into 1/2" x 1/2" cubes & distribute evenly amongst the veggies
Cover the pan with tinfoil and bake in the oven at 375 degrees for approx. 45 minutes or until the veggies are tender inside
Uncover the veggies and broil to brown and crisp them as desired and most of the liquid has evaporated
Squeeze lemon juice on top and serve.
