Brinjal/Egg Plant-2 medium cut into cubes
Ginger-1 tspn chopped
Garlic- 1 tspn chopped
Onion-1 big chopped
Tomato-1 big chopped
Turmeric powder-1/4 tspn
Cumin powder-1/4 tspn
Red chilli powder- 1 1/2 tspn
Lemon juice-1 tspn
Salt
Oil
1. Heat oil in a pan.Add the brinjal pieces and shallow fry them till they start changing colour.
Transfer them to bowl.In the same oil,add ginger,garlic and onion.Saute till the onions become brown.
Now add chopped tomato.Cook till the tomato becomes soft and mushy.Now add the powders.Saute till oil starts to ooz out.
Now add the fried brinjal pieces.Sprinkle enough salt.Mix everything well. If the masala appears dry,you can add 2-3 tablespoons of water to it.Cover and cook for 2-3 mints in low flame.Finally add lemon juice,mix well and remove from fire.
Serve hot.
