(Dough) Same as cream puffs
1 cup water
1 cup all-purpose flour
1/2 tsp salt
1 stick of unsalted butter, softened at room temp
4 eggs at room temp.

(cream filling:)
2 1/4 cups whole milk
1/4 cup corn starch
1/4 cup granulated sugar
4 egg yolks
1 tsp vanilla extract
1 small pinch of salt

(Ganache)
4 oz semi sweet chocolate chips
1/4 cup heavy cream

Prep. Time → 10 min

Cook Time → 45 min

1. 1. To make custard: In a saucepan, add the milk in the saucepan. (cold) Add all the cream filling Ingredients in pan too: Whisk together.

2. 2. Put saucepan on stove, and put on medium heat, stirring consistently, till it thickens. ( 3 to 8 mins)

3. 3. When done, put cream filling in glass bowl. Cover with plastic wrap, and put in fridge to cool completely. Make sure plastic wrap is touching custard.

4. 4. To make dough: In a sauce pan, add water, and a stick of butter. Put on stove and bring to a boil, and butter till fully melted.

5. 5.When melted, add flour and salt. Turn off burner, and stir like crazy. (xD) Turn heat back on once it comes to a dough, and cook for 2 mins and keep stirring.

6. 6.Put dough in Mixer Bowl, and mix 30 seconds to a min. Cool down dough: Preheat oven to 425* and get a baking sheet with parchment paper.

7. 7.While stirring, add one egg at a time.

8. 8.Take a pastry piping bag with tip fill DOUGH in it. On your parchment paper sheet, squeeze dough like a hot dog Bun on sheet. ( eclair size shape)

9. 9. Take a bowl of water, and brush the tops with it. Put in oven at 425* at 10 mins. When 10 mins is done, turn to 350* and allow to bake 25 mins. Till golden brown.

10. 10. When they come out of oven, take a tooth pick, and make a little hole on both ends, let them cool compelety.

11. 11.Get custard back, and put on table.

12. 12. To make Ganache: Put semi sweet chocolate in another bowl: Take heavy cream, and put in sauce pan. Bring to a simmer. When nice & hot, take off stove and pour in chocolate chip bowl. Let sit for a few mins. Stir till dark:

13. 13.Take a another pastry piping bag, and fill it with a custard.

14. 14. Take a toothpick, and make a bigger hole on both sides of the Eclair shell, and fill with custard cream on both sides.

15. 15. Dunk the top of eclairs in the chocolate bowl. Let the chocolate set and eat.
