2 oz thin rice noodles, cooked and rinsed according to package instructions
8 large rice paper wrapper rounds
1 bell red pepper, thinly sliced
1/2 cup of a cucumber, sliced into matchsticks
5 green onion, thinly sliced into matchsticks
1 carrot, peeled and shredded
1/4 cup chopped cilantro
1/4 cup chopped mint
2 Tbsp canola oil
3 Tbsp rice wine vinegar
1 Tbsp fresh lime juice
1 Tbsp sugar
1 Tbsp soy sauce
1 clove of garlic, minced
1 tsp grated ginger

Prep. Time → 15 min

Cook Time → 4 min

1. 1. In a measuring cup, add rice wine vinegar, grated ginger, and Garlic. Then the canola oil, sugar, lime juice: whisk.

2. 2.Add cooked rice noddles to the bowl of chopped veggies: pour dressing over rice noddles and veggies.

3. 3.Toss together: let sit for 10 mins:

4. 4. Take a bowl of hot water: also take a cutting board, on top a warm damp kitchen towel: if not, it's going to stick:

5. 5. take rice wrapper, and dip in hot water, both sides: till jelly like:

6. 6.then lay it flat on kitchen towel:

7. 7.take some filling, and put it in wrapper: wrap like burrito, and place on platter:

8. 8.take one, and chop In half and serve.
