Homestyle Gumbo of Heidi Pyper - Recipefy

3 large links Hot Italian Sausage, or Andouille
1-2 Chicken breasts
1/2 lb ez peel uncooked, Shrimp (31-36 count)
1 can chicken stock
1 can diced tomatoes (do not drain)
2 cups +/- water
onion powder
garlic powder
celery seed
cajun seasoning
herb and garlic old bay
italian seasoning
1-2 tsp lime juice

1 cup uncooked rice
1 1/2 cups water

1. 1. with a little bit of olive oil heat a large saucepot and cook sausage links till done or almost done.

2. 1b. use a rice cooker to cook 1 cup rice. or place rice and 1 1/2 times the amount of rice used of water to a pot, bring to a boil, reduce heat and simmer till rice is cooked through. (do not stir)

3. 2. While sausage is cooking; cut chicken into small dice and add a lil bit of all seasonings to coat. Peel shirmp and add a little bit of each seasoning to coat.

4. 3. remove sausage from pot and cut into slices.

5. 4. Cook chicken in same pot, add sausage slices back in.

6. 5. Once chicken and sausage are completely cooked through, add tomatoes, chicken stock, water, lime juice and some of each seasoning to taste. Bring to a soft boil.

7. 6. Add shrimp and let simmer till shrimp is done.

8. To Serve: place some rice in a bowl and pour gumbo over it.
