Horseradish carrots

6-8 carrots (about 1lb.)
1/2 c. mayonnaise
2 Tbsp. grated onion
2 Tbsp. horseradish
1/2 tsp. salt
1/4 tsp. pepper
1 Tbsp. butter
1/4 c. fine bread or cracker crumbs

Prep. Time → 15 min

Cook Time → 15-20 min

1. Cut carrots in to strips.
Cook carrots in small amount of water for 8-10 minutes after they come to a boil.
Pour liquid into measuring cup--save 1/4 c. of carrot water
Put cooked carrots in shallow baking dish.
In smal bowl combine:
1/2 c. mayonnaise
2 Tbsp. grated onion
2 Tbsp. horseradish
1/2 tsp. salt
1/4 tsp. pepper
Gradually add the 1/4 c. of reserved carrot water.
Pour mixture over carrots.
In small fry pan, melt 1 Tbsp. butter
Put in 1/4 c. fine bread or cracker crumbs.
Mix with fork until crumbly.
Pour crumbs over sauce.
Bake at 375 for 15-20 min.
