1/2 Large Yellow Onion
3 Vine Ripened Tomatoes
1 Jalapeño (you can use hotter peppers depending on preference)
1 Cup Yellow Corn
2 Large Red Mango
2 Yellow Flesh Peaches
1 Cilantro Sprig
2 Juice of 2 Limes
2 Cloves of Garlic

Prep. Time → 15 min

Cook Time → 5-10 min

1. Finely Chop Onion, Tomatoe, Jalapeño, Garlic, and sauté over medium heat with Corn in a large skillet.
While other ingredients are in skillet simmering, prepare both the mango & peaches by skinning and de-coring them.
Once finished remove all ingredients from skillet and place in a large glass bowl. Then incorporate the mango & peaches.
Finally, remove all cilantro leaves from sprig and finely chop and incorporate into large bowl with other ingredients. Then half your limes and squeeze out juice over entirety of the dish. Mix everything together with spatula, chill, then serve with fresh Tortilla chips.

2. PS- this works as a great Ceviche base as well!
