1 9" homemade or store brought pie crust

(for the lemon curd:)
1 1/2 cups water
1 cup granulated sugar
1/4 cup corn starch
1/4 tsp salt
2 zest of lemon
2 juice of lemon
2 Tbsp unsalted butter
4 egg yolk, beaten

(for the meringue:)
4 egg whites
6 Tbsp confectioner sugar
1/4 tsp cream of tartar: *Is added to beaten egg whites, to increase their stability and volume*

1. *Has lemon curd*

2. 1. Preheat oven to 350*. Take a 9" tart pan, and spray with non stick spray.

3. 2.Take Pie crust, and put inside tart: Take off excesses: Poke bottom with fork and around: Spray foil with non stick spray, and put foil on top of tart pan:

4. 3.On top of foil, add dried beans ( blind baking): Put in oven, 350* for 10 mins.

5. 4. In a medium pan, on medium heat, add sugar, corn starch, and salt: mix together.

6. 5.Add water, lemon juice & zest. mix. Mix the entire time: Bring to a boil, then add butter: then heat to low. Whisk till butter is melted:

7. 6.Take half (ladle spoon) of the mixture, and put in beaten egg yolks bowl: mix.

8. 7.Put egg yolk mixture in pot: mix. cook for a min. nice and thick: turn off, and let sit 10 to 15 mins.

9. 8.When 10 min blind baking is done, remove foil& beans: put crust back in oven, 8 to 10 mins till color:

10. 9.Take a medal bowl: (should be bowl of the standing mixer) and take half of lemon, and rub the inside with it:

11. 10.In a standing mixer, add egg whites: Turn on, medium till egg whites are frosty:

12. 11.In the bowl with the confection sugar, add cream of tarter together:

13. 12. While egg whites are frosty, start adding the confection sugar TBSP at a time:

14. 13.Take lemon curd, and pour in tart:

15. 14.Pour egg whites mixture on top: and spread to make even: take spatula, and dap the top of the egg whites with it for stiff peaks:

16. 15.Put in oven 350*, 15 mins till golden brown on top of egg whites:

17. 16.Let cool for 3 hours; make sure it's comeplelty cooled.

18. 17.Remove out of tart and slice and eat.
