Lettuce wraps
Recipe by
1 tablespoon coconut oil
1 lb ground chicken or turkey or beef or lamb
3 cloves garlic, minced
1 medium yellow onion, diced
1/4 cup hoisin sauce
1 tablespoon tamari sauce
1 tablespoon rice wine vinegar
1 tablespoon freshly grated ginger
1/2 tsp cayenne or chile powder
1/4 cup bean sprouts
1 green onion, sliced, use green and white
Kosher salt and freshly ground black pepper, to taste

1. Heat oil in a fry pan at medium high.
2. Add ground chicken and cook/crumble until browned, about 4 minutes.
3. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and cayenne.
4. Cook the mixture until the onions have become translucent, about a couple of minutes.
5. Stir in bean sprouts and green onions, then cook until tender, about 1-2 minutes.
6. Season with salt and pepper, to taste.
7. To serve, spoon 2-3 tablespoons of the chicken mixture into the center of a lettuce leaf and roll it up.
